Traditional Guacamole

"Do you want to add guacamole?" Is that even a valid question?! Of course we want guacamole...pile it on! The best guacamole we've had is made with fresh avocado, and mixed in a flavor-enhancing molcajete. Used for centuries by Mexican cooks, this ancient form of mortar and pestle uses the rough surface of volcanic stone to more efficiently grind and release flavorful oils from vegetables and spices.

TRADITIONAL GUACAMOLE

Ingredients

  • 3 avocados
  • 2 tbsp onion
  • 1 tsp jalapeno
  • 1 tbsp cilantro
  • 3/4 tsp salt
  • 1-2 limes

Directions
  • Chop onion, jalapeno, and cilantro
  • Add onion, jalapeno, and cilantro to molcajete, along with the salt and the juice of one lime.
  • Grind into a paste using the tejolote, or pestle.
  • Add the peeled avocados, and use the tejolote to combine.
  • Add more salt or another squeeze of lime to taste.
  • Serve immediately with warm tortilla chips or on tacos, burritos, or tostadas.

    Store leftovers in an airtight container in the fridge.
