Instructions:

  2. Preheat your grill to medium-high heat. In a bowl, toss the mixed vegetables with 2 tablespoons of olive oil, salt, and pepper. Grill the vegetables for 5-7 minutes, or until they are tender and lightly charred. Remove from the grill and set aside.
  3. Cook the ravioli in boiling salted water until al dente. Reserve 1 cup of the cooking water, then drain the rest.
  4. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the grilled vegetables to the skillet and toss them for a minute to warm them up.
  5. Add the cooked ravioli, basil pesto, and grated Parmesan cheese to the skillet with the vegetables. Toss everything together until the ravioli and vegetables are well coated with the pesto sauce. If the sauce seems too thick, add some of the reserved pasta water to loosen it up.
